Sunday dinner
28 June 2008It is Saturday night but I put Sunday dinner in the crock pot. That makes life easier on everyone on Sunday morning.
This is my mother-in-law’s recipe adapted just a little. THis is my version. Sometimes we just make it all for the chicken with no dumplings. It is a wonderful flavored chicken.
Chicken and Dumplings
(WARNING SOUTHERN FRIENDS THESE ARE YANKEE DUMPLINGS I WAS TOLD! HA…light and fluffy)
4 chicken breasts (or so)
1 large onion
several baby carrots..chopped if you like
1 can chicken broth (or 2 chicken bouillon cubes dissolved in 15 oz of water)
2 1/2 tsp salt
1/8 tsp pepper
1/4 tsp thyme
6 Tbsp flour
1 cup buttermilk biscuit mix
1/2 cup milk
Place chicken, onion, carrot, celery, chicken broth, salt, pepper, thyme and 3 cups water in crock pot. Set on low all night.
Next morning remove chicken and veggies to a platter and strain broth into a bowl. You should have 5 cups. Bring to boiling. In a separate small bowl blend flour and 1/2 cup water until smooth. Pour mixture into boiling broth stirring constantly. Boil 1 minute. Return chicken and veggies to pan. Bring to boiling, covered. Make dumplings with 1 cup biscuit mix and 1/2 cup milk. Droup by rounded tablespoons into boiling chicken. Cook uncovered 10 minutes and covered 10 more minutes.
Most of the time I double the dumpling part and it is fine.
