Cooking a Bunch!

I would post a “Menu Plan Monday”. But, my plans always go out the window!!  But, I did get several things cooked the last few days. I have made a crockpot of chilli, a crockpot beef roast that I made a BUNCH of barbeque for this week. I also made a crockpot of pinto beans.  I grilled chicken on Sunday. I always do extras so one night we can have quesadillas with that grilled chicken.

So, I thought I would post my chilli recipe. This is one of the few that I have just made up all by myself.

1 pound of ground beef, browned and drained

2 cans of kidney beans

1 can of rotel

1 can tomato sauce

I LARGE can of diced or crushed tomatoes. (Sometimes I throw in the “chilli ready” tomatoes you can buy)

A packet of chilli seasoning.

little salt and pepper.

I do this in the crockpot on low all night  and then put it in the fridge. We always let it sit a day because it is SO much better the next day.

We eat our chilli with cheese, sour cream, crackers and a grilled cheese sandwich.

    It must be the time of year.
    I made two batches of pumpkin fudge over the weekend.
    Then yesterday, after helping my mom clean her new house I came home and made this for dinner:
    Baked ham
    Baked Potato Casserole
    Corn
    Devilled eggs
    homemade rolls.

    Yummy, now off to enjoy leftovers for lunch!
