26 October 2008These are a few I was typing out for someone else and thought I would post. We use these often.
Creamy Beef Lasagna
1 ½ pounds ground beef
2 cans (15 oz each) tomato sauce
¼ cup chopped onion
2 tsp sugar
2 tsp salt
2 tsp Worcestershire sauce
½ tsp garlic salt
2 packages (8 oz each) cream cheese
1 cup (8 oz) sour cream
¼ cup milk
18 lasagna noodles, cooked and drained
1 cup cheddar cheese
In skillet, cook beef over medium heat; drain. Stir in tomato sauce, onion, sugar, salt, Worcestershire sauce and garlic salt. In mixing bowl beat cream cheese, sour cream and milk. In greased 13 x 9 baking dish layer a fourth of the meat sauce, six noodles and third of the cream cheese. Repeat layers twice. Top with the remaining meat sauce. Cover, bake 350 for 40 minutes; sprinkle with cheddar cheese and bake 5 more minutes. Let stand 15 minutes before cutting.
Potato Chowder
8 cups diced, peeled potatoes
1/3 cup chopped onion
3 cans (14 ½ oz each) chicken broth
1 can cream of chicken soup
¼ tsp pepper
1 pkg (8 oz) cream cheese
In slow cooker, combine first five ingredients. Cover and cook 8-10 hours. Add cream cheese.
** I take some of the hot soup out..add my cream cheese and mix with a hand blender, then add all that back to the soup. This makes the cream cheese not clump up. You can top with crumbled bacon.
Sour Cream Chocolate Frosting
1 cup semisweet chocolate chips
4 Tbsp butter
½ cup sour cream
1 tsp vanilla
¼ tsp salt
2 ¾ cup confectioners sugar
Melt chocolate and butter in microwave or stove. Let cool and blend in sour cream, vanilla, and salt. Gradually add sugar until frosting is of spreading consistency.
Best Spanish Rice
2 Tbsp oil
2 Tbsp chopped onion
1 ½ cups uncooked white rice
2 cups chicken broth
1 cup chunky salsa
Heat oil in a large, heavy skillet over medium heat. Stir in onion and cook until tender, about 5 minutes. Mix rice into skillet stirring often. When rice begins to brown stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

You know me I head straight for the one with chocolate involved LOL!!
